【摘要】:ThisEuropeanStandardspecifiesaspectrometricmethodforthedeterminationofnitrateandnitritecontentofmeatproductsandhasbeenvalidatedfordifferentmeatproductswithacontentof9mg/kgto22mg/kgnitritecalculatedassodiumnitriteand23mg/kgto48mg/kgnitratecalculatedassodiumnitrate.Experienceshaveshownthatthemethodisalsoapplicablefortotalnitriteandnitratecontentfrom5mg/kgupto125mg/kgcalculatedassodiumnitrite.NitriteinanaqueousextractofthetestsampleistreatedwithsulfanilamideandN-(1-naphthyl)-ethylenediaminedihydrochloride.Theformedredcompoundismeasuredspectrometricallyatawavelengthof540nm.Nitrateinanaqueousextractoftheanalyticalsampleisconvertedintonitritebynitratereductase.ThisconvertednitritetogetherwiththenitritewhichisalreadyintheanalyticalsamplereactswithsulfanilamideandN-(1-naphthyl)ethylenendiaminedihydrocloride.Thecolourintensityofthisresultingredcompoundismeasuredinaspectrometerat540nm.Thenitratecontentiscalculatedfromthedifferencebetweenthespectrometricmeasurements.
